Easy pancake recipe

Ingredients

  • 100g self raising flour
  • 100ml oat milk
  • 1 egg
  • 1 banana

Method

  1. - Pour the oat milk into a bowl. Sift in the flour, slowly, and mix thoroughly to avoid lumps.
  2. Add the egg to the mixture and whisk until full combined to make
    your smooth batter.
  3. Slice your banana into thin slices.
  4. Heat a frying pan on a medium heat with a drizzle of vegetable oil or milk-free margarine.
  5. Add a table spoon of the batter to the pan to create a circle. Add slices to the top of your batter using tongs or a fork. Once the batter starts to set at the slides (1-2 minutes) use a spatula to flip and cook the other side for a further 1-2 minutes until set.

Variations

  • Swap the banana for other fruits e.g. redcurrants or raspberries
  • Add 1 tsp of vanilla extract, a tsp of lemon juice and 1-2 heaped tsp of poppy seeds.
